Tooth-friendly oatmeal cookie recipe

Ingredients:

  • 1/2 cup coconut oil
  • 1 large egg, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 4 tablespoons light brown sugar
  • 3/4 cup oat flour (regular oats blended in a blender)
  • 1/2 cup old-fashioned oats
  • 1/4 cup quick oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/2 cup dark chocolate chips

Oatmeal cookie recipe baking instructions:

Step 1: Melt 1/2 cup coconut oil, then let it cool to room temperature before using.

Step 2: Blend regular oats in a food processor (or blender) until fine and flour-like. Measure 3/4 cup, lightly packed.

Step 3: In a large bowl, whisk together the cooled coconut oil, vanilla, egg, and brown sugar until smooth.

Step 4: Stir in the oat flour, old-fashioned oats, quick oats, baking soda, cinnamon, and salt. Mix until just combined, then fold in dark chocolate chips.

Step 5: Cover and refrigerate for 30 minutes. Scoop about 14 dough balls, roll and slightly flatten them, then chill again for another 30 minutes.

Step 6: Preheat the oven to 350°F. Place cookies 2 inches apart on a lined baking sheet and bake for 7–9 minutes, until tops begin to set. Cool on the pan for 5 minutes, then transfer gently to a rack.
